Stone, timber, and lime — the traditional Cretan materials — are restored with respect and attention to detail.
The aim of the intervention is for the building to once again become a meeting point for villagers and visitors.

The study begins from a careful survey and reading of the traditional olive press, element by element.

The restoration allows the olive press to become a point of reference once more, while respecting the traditional materials and Cretan building knowledge.
